Batter Up!

Orange-Sesame Chicken 

A good orange-sesame chicken starts with a good battered fried chicken. This is the base to many oriental dishes that use either shrimp or chicken.  The meat is deep fried first and then cooked again with a sauce like sweet and sour or plum sauce to name a few.

Tempura battered deep fried dishes (shrimp and chicken), are commonly eaten in Japan. This recipe makes basic batter. Using very cold liquid for the batter is recommended in order to make crispy tempura.
  • 1 egg
  • 1 cup ice water/cold water or coconut milk or cold beer
  • 1 cup all purpose flour, sifted

Beat an egg in a bowl. Add ice water or ice cold beer in the bowl. Make sure to use very cold liquid. Add sifted flour in the bowl and mix lightly.  Be careful not to over-mix.

Heat oil in a deep fryer till it reaches 325 degrees. One by one, dip chicken pieces  into the batter to coat evenly. Deep fry a few pieces of chicken in the hot oil for about 10 minutes or until golden brown. Drain on paper towels.  

Orange-Sesame Sauce

¼ cup ketchup
¼ cup honey
4 teaspoons brown sugar
2 tablespoons white vinegar
½ cup water
2 tablespoons cornstarch (dissolve in 2 tablespoons of cold water)
1 teaspoon sesame oil
the juice of ½ orange
1 teaspoon orange zest
sprinkle of onion powder
sesame seeds

In a bowl whisk together ketchup, honey, sugar, water, vinegar, cornstarch, sesame oil, orange juice, orange zest, and sesame seeds. Pour into a wok and cook until the sauce is thickened and bubbly. Mix in a bowl with the fried chicken pieces. Garnish with white sesame seeds and scallions. Serve with white rice or vegetables.
