Last year during a trip to Florida, I found fresh, sweet peppers from South America in a Latin supermarket. Because I enjoyed the flavor of these peppers so much, I saved some seeds and planted them early
spring. I am happy to see how well the plants are doing and I have managed to pick quite a few peppers. These little peppers are called "Aji Dulce" and they are used in many Latin meals. The peppers are great flavor enhancers and they bring ordinary dishes to another level.
To enjoy the fresh summer flavor of this peppers, we are canning a few jars to use later on in the year. They are easy to prepare and you can use any kind of peppers you may have growing in your garden.
Fill pint jars with sliced peppers. In each jar put a pinch of Italian seasoning, 1 teaspoon salt, 2 cloves garlic, and 1 teaspoon olive oil. Bring to a boil: 2 quarts vinegar, 1 quart water and a pinch of sugar. Pour over peppers and seal jars.
