The recipe for this dip has been published all over the place. As a matter of fact, I have posted this here before, but it is so good that I don’t want people to ignore it. The truth is, I saw an interesting artichoke plant and the artichoke dip just came to mind. This recipe is very easy to put together and it is normally served as an appetizer with crackers. I have to keep my distance from this dish because I can’t stop eating it once I take the first bite. If you are having a party, this is a recipe to keep in mind.
1 (6.5 ounce) jar marinated artichoke hearts, chopped
1 cup mayonnaise
1 cup grated Parmesan cheese
Preheat oven to 350 degrees. In a medium bowl, mix together artichoke hearts, mayonnaise and parmesan cheese. Scoop the mixture into a medium baking dish and bake in the preheated oven 15 minutes, or until lightly brown on top.
Wait, don’t just use it as a dip, have cooked angel hair spaghetti and use it as a cream sauce base. The results were amazing!!! Baked in personal portion baking dishes, simply let the pasta (previously cooked and tossed with light butter) rest on the dish and pour the dip over it. Sprinkle a light coat of Parmesan cheese and bake until bubbly and lightly brown. Serve with a good salad, sliced French bread, a glass of wine and watch it disappear.
