No time to make dessert? You need to keep a box of mini phyllo shells in your freezer in case of a dessert emergency. You can create a quick dessert that makes you look like a professional party planner. Greek yogurt with lemon curd is one of my favorite fillers. I do have to admit that Nutella with roasted hazelnuts and whipped cream is pretty good too.
Mini phyllo cups with lemon curd and fresh strawberries.
1 6-oz container of zero-fat Greek yogurt
½ 10 oz. jar of lemon curd
1 tablespoon Strawberry JELL-O Gelatin (optional)
frozen mini phyllo cups
In a bowl, stir together yogurt, lemon curd and gelatin. Let the mixture set in the refrigerator for at least 15 minutes. Place shells on an ungreased baking sheet. Brush shells with melted butter and bake for 3-4 minutes in preheated oven at 350°F. Spoon yogurt mixture into phyllo cups and garnish with fresh strawberries.
