RICE PUDDING - A TIMELESS DESSERT




Rice, for dessert? Oh yes, Arroz con Leche or Rice pudding is very well known and a popular dessert in Latin countries. How popular? Well, there is a children’s song named Arroz con Leche. So you sort of have to try this dessert, out of curiosity if nothing else. It reminds me of the ever popular bread pudding. Rice pudding is easy to make and its flavor is fantastic.  If you google it, you will find many recipes with different ingredients.  One thing is for sure, this sweet and creamy pudding is a dessert that will win you over. As to what kind of rice to use, I like to use Arborio rice. Arborio is the rice used to make risottos. The starches of this rice are released while cooking, giving it a creamier texture.  This is a comforting treat that can be finished with your favorite topping. Usually it is just sprinkled cinnamon, but I’ve tried it with caramel sauce and even burnt sugar like a brulee.


Ingredients

2 quarts whole milk
1 cup Arborio rice
1 cup sugar
2 tablespoons unsalted butter
1 vanilla stick, split
1/4 teaspoon salt
 1 cup heavy cream
1/2 cup raisins
¼ cup scotch

Directions

In a heavy saucepan, bring milk, rice, sugar, butter, vanilla, and salt to a boil. Reduce heat and simmer uncovered stirring off and on until rice is soft. Add heavy cream to the rice and stir in raisins and scotch. Pour pudding into a container and chill pudding. Sprinkle with cinnamon and garnish with orange peel.
