Better watch out, he is baking it twice! Biscotti are nutty and nice!

Twas the night before Christmas and all through the house the smell of biscotti from the oven coming out.

Biscotti are easy to make and a perfect accompaniment to a cup of coffee.  Being very dry, biscotti by tradition are served with a drink, into which they may be dunked. There are many different flavors and often contain nuts, dried fruits and sometimes are decorated with or dipped in chocolate.


  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla extract  
  • 3 1/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • ½ cup raisins


Preheat the oven to 350 degrees. Line a cookie sheet with either parchment paper or a nonstick silicone baking pad In a medium bowl, beat together the oil, eggs, sugar and vanilla flavoring until well blended. Combine the flour, cinnamon, raisins and baking powder; stir into the egg mixture to form dough. Split dough into 2 pieces. Shape each piece into a roll that stretches to the length of your cookie sheet. Place roll onto the prepared cookie sheet, and push down to 1/2-inch thickness.  Each unbaked roll will be approximately 3 inches wide by 10 inches long.
Bake for 25 to 30 minutes, until golden brown. Remove from the baking sheet to cool on a wire rack. When the biscotti are cool enough to handle, slice each one diagonally into 1/2-inch slices. Place the slices cut side up back onto the baking sheet. Bake for an additional 10 minutes on each side. Biscotti slices should be lightly toasted.
