Homemade pasta


2 ¼ cups all purpose flour
2 large eggs
1 teaspoon salt
1 tablespoon olive oil
1/3 cup water

Combine all ingredients in a Kitchen Aid bowl. Using the bread hook, mix all ingredients till the dough separates from the bowl. If it is very sticky, add a little more flour and kneed on a flat surface. Let it rest for at least 30 minutes at room temperature. Make the pasta using a pasta maker or the Kitchen Aid pasta attachment. 

Fresh pasta makes a great appetizer. Serve small amounts topped with a home made sauce and Parmesan cheese.

This appetizer stimulates the appetite.  Served with a good wine, it can make people so hungry for more of it or ready for the real deal.  The secret to an amazing dinner is to have hungry guests. Appetizers and aperitifs can be a good aid to achieve a fantastic gathering. Serve a good dessert after dinner and get ready for thank you notes.
