Easy and scrumptious Chocolate Cupcakes



If you like peanut butter cups and chocolate cupcakes,  you’ll love this combination. Chocolate cupcakes spread with Peanut Butter Buttercream Frosting. 


Ingredients 


3/4 cup unsweetened cocoa
1 1/2 cups all purpose flour
1 1/2 cups sugar
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 large eggs
3/4 cup water
3/4 cup buttermilk
1/3 cup vegetable oil
1 teaspoon Vanilla extract
1/2 cup mini chocolate chips

Directions 
Preheat oven to 350F. Place liners in muffin tins.
In a large bowl, mix cocoa, flour, white sugar, baking soda, baking powder and salt until well incorporated. In a medium bowl, whisk together eggs, water, buttermilk, vegetable oil and vanilla extract. Add wet ingredients to flour mixture and mix well. Add in mini-chocolate chips, and fill muffin cups evenly with the prepared batter. Insert one miniature Reese’s Peanut Butter cup in the center of each cupcake before baking. Bake at 350F for 15 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove cupcakes from the pan and cool completely on a wire rack before frosting.


Peanut Butter-Buttercream Frosting 

3 cups powdered sugar
1/3 cup peanut butter
1 1/2 teaspoons vanilla extract
About 1/4 tablespoons milk
With an electric mixer at low speed, mix the powdered sugar and PB together. Mix well, add vanilla and milk. Increase speed of mixer to medium and beat for 2 minutes or until smooth.

Can I lick the bowl? Pleeeeaaaaassseee?

I always have kids standing in line to lick the bowl and a dog who waits for something to drop. The perfect clean up crew.
They would love these cupcakes. My son and husband are huge peanut butter fans. I like how your frosting deco came out. Looks very professional.

I'm still waiting on these cupcakes, although to Stephanie's credit, she's got the recipe sitting directly above the monitor on a couple post-its... and she's talked about it a couple of times. I'm anxious to try ém out.
