A buttercream frosting recipe for a "Gold Cup" Cupcake winner.

Copa de Oro is a coffee liquor very much like Kahlua, derived from real Mexican Arabica beans, vanilla and other exotic flavors. In English, Copa de Oro means "'Gold Cup" and this cupcake won my gold cup.

Dark and moist chocolate cupcake infused with brewed Starbucks coffee.

This elegant cupcake, was topped with a mocha buttercream icing, drizzled with Copa de Oro and caramel rum sauce. This is a cupcake that has earned its name!

Mocha Buttercream Frosting

1 1/2 cups butter, softened
cups powdered sugar
tablespoons cocoa powder
teaspoons vanilla extract
1  Starbucks VIA® Ready Brew (dissolved in a teaspoon of water)

Beat the softened butter and powdered sugar together until creamy.  Add in the cocoa powder, vanilla extract and coffee, beat until it's creamy and fluffy (2-3 minutes). Top cupcakes or refrigerate to be use later.
