Recipe for Key Lime Mousse: A refreshing dessert!


1 cup of fresh lime juice
2 (14 ounce) cans sweetened condensed milk
6 egg yolks
2 teaspoons lime zest
3 drops green food coloring
2 cups heavy whipping cream
1 (1/4 ounce) envelope unflavored gelatin
1/4 cup sugar


 In a medium-sized container make “lime custard” by combining lime juice, sweetened condensed milk and egg yolks. Insert a candy thermometer and cook, stirring often. Remove from heat as soon as thermometer registers 160 degrees, about five minutes, (do not overcook or the mixture will curdle). Add in lime zest and food coloring; then transfer to a large bowl and cover the surface directly with plastic wrap and refrigerate for about an hour. Meanwhile, in a small cooking pot over very low heat, warm 1/2 cup of the cream. It should be slightly warm to the touch. Drop gelatin over the cream and let it rest for a couple of minutes. Cook over low heat, and stir until dissolved. Removed from the stove, and cool for a few minutes. With an electric mixer beat the 1/4 cup sugar with the rest of the cream until soft peaks form. Lower the speed of the mixer to add the gelatin mixture. Continue beating mixture until stiff. Reserve one cup of the whipped cream mixture; cover and refrigerate. Fold remaining gelatin/cream mixture into the lime custard; cover surface with plastic wrap and refrigerate until set, about 4 hours. Spoon mousse into glasses or bowls and top servings with reserved whipped cream. Garnish this fantastic dessert with lime wedges or as desired. Mini shot-glasses from Pier One Imports!
