These cupcakes were specially made for Fashion Chalet.
Make cupcakes out of a pound cake recipe or your favorite vanilla cake.
Bake and let them cool before they can be filled and iced.
Fill cupcakes with lemon mousse.
• 1 (16 oz.) container Cool Whip
• 1 cup sweetened condensed milk
• Lemonade concentrate, 11.5 fl oz.
In a large container add condensed milk, and add lemonade concentrate. Mix well and fold in Cool Whip.
After filling with mousse, then top with lemon meringue.
3 1/2 cups powder sugar
1/2 cup of butter (1 stick) softened
1/4 cup of milk
1 teaspoon vanilla
1 Teaspoon lemon zest
2 Tablespoons lemon juice
Mix the butter, lemon zest and vanilla together, making sure all the lumps are gone. Add the milk, and quickly cream it into the butter mixture. Mix in the sugar, ½ cup at a time. Once the sugar is all in the mixer, cream on "high" for two minutes and add in lemon juice.
