Port wine is a Portuguese wine from the Douro Valley in the northern area of Portugal. A sweet wine, that’s great for cooking, and well known for the sauce that carries its name “Port demi-glace”. We do make Port Wines in the USA. They are rich in berry flavors and are made out of red and sometimes white grapes.
1 cup port wine
Salt and pepper
2 cups beef stock
In a sauce pot, over medium high heat, reduce the wine to 1 tablespoon liquid. Add the beef stock and reduce by 2/3. Season with salt and pepper and enjoy over chicken, beef or sautéed veggies.
Another thing about this sweet fortified wine, is that it is usually served at the end of a meal. It pairs nicely with chocolate and fruits such as strawberries and raspberries.
