Thumbprint Cookies Recipe




Still baking and getting ready for New Year's Eve dinner. This year I am using a Thumbprint cookies recipe that’s easy to make and requires few ingredients. The cookies will be displayed on a carefully arrange tray to make them very  irresistible. Thumbprint cookies are not hard to make at all, and they can be made a head of time. Anything that is great testing and can be made in advance should not be overlook, especially if you have to cook for a large group with very limited time. I give this recipe a Thumbprint-up.

Thumbprint Cookies Recipe

Ingredients

  • 1 cup of butter (2 sticks ), room temperature
  • 1/2 cup of sugar
  • 1 egg yolk room temperature
  • 2 1/4cups of flour
  • Butter cream icing

Directions

Cream butter and sugar on high speed for about 3 minutes. Add the yolk to the butter mixture, add  flour and mix until just combined. Place the dough in the fridge for 30 minutes and preheat the oven to 350F. Roll the dough into balls about 1 inch in diameter. Place the balls on cookie sheets. Press down with your thumb to make a small well in the center of the cookie.
Bake for 10-12 minutes or until slightly firm. Allow to cool for a few minutes on the cookie sheet to firm up before moving them to a wire rack to finish cooling. Fill with favorite fruit jam, cream cheese icing, butter cream icing, etc.
