Rice for real!

There are a lot of rice lovers out there. Rice can be cooked in many ways. Whether you like aromatic rice such as Jasmine or regular long grain rice, it has been and still is a valued asset in the culinary world. Wild rice and brown rice are also widely used to enhance or increase the nutritional value of this fantastic grain.
Rice can be used as a starch to complement your dinner or it can be a main ingredient. International dishes such as paella, fried rice, “congris (Cuban style rice and red beans) and risotto are an indication of the popularity of rice.

If you are concerned with the amount of carbohydrates existing in rice, you can still enjoy the mentioned dishes by substituting cauliflower for rice. To make low carb rice that is also loaded with fiber, use the following recipe.

Cauliflower Rice
1 large head of cauliflower
 salt to taste

Use the large holes on your cheese grater or a food processor to grate the cauliflower. Place in a microwaveable dish and cook covered for 4 minutes. No water needs to be added!

Carb Count: Each cup contains 5 grams of carbohydrates, about half of which is fiber, for an Effective Carbohydrate Count – ECC of   of 2.5 grams of carbs per cup.

I'll prefer cauliflower any time over rice. It is so delicious. Just had some tonight.
