Oh, the joy of comfort food! We all love food that brings some form of comfort, sense of well-being and satisfaction. They are dishes that bring you home and put a smile on your face. I just finished this “Where is the Mac in my cheese” casserole that is very low carb and best of all, got thumbs up from my kids.
1 fresh medium size cabbage
3 tbsp unsalted butter, cut into pieces
1 tbsp mayonnaise
1 tbsp yellow mustard
3/4 cup shredded cheddar cheese
½ can cheddar cheese soup (low sodium)
Preheat oven to 350 degrees F.
Slice and dice cabbage to the size of macaroni.
Heat a pan with enough water to cover the cabbage.
Season the water with salt, black pepper and powdered onion and add cabbage.
Heat until cabbage is a little tender but not mushy (we are simulating pasta).
Mix mayo and mustard and coat the bottom of a baking dish.
Drain the cabbage and place on prepared dish.
Add cheddar soup and ½ cup shredded cheese and mix all together.
Top with the rest of cheddar cheese and dot with pats of butter.
Bake uncovered, for about 15 minutes, or until the cheese is brown.
We are talking about a Total of 17 g. of Carbs for the entire dish.
Makes about 5 servings of less than 3.5 grams of carbohydrates each.
