Great Aunt Olive’s cookies

Ms. Sandefur’s Great Aunt Olive’s cookies are an inspiration for the cookie baker. These cookies are healthy and delicate. They capture people’s attentions and admiration. A true culinary work of art.  


Ingredients for “Great Aunt Olive’s (what a Quaker she was) oatmeal cookies”

                            1 cup extra virgin olive oil
                            1 ½  cups firmly packed brown sugar
                            2 eggs
                            2 teaspoons vanilla extract
                            ¾ cup of whole wheat flour
                            ¾ cup of unbleached flour
                            1 teaspoon baking soda
                            2 teaspoons cinnamon
                            ½ teaspoon salt
                            3 cups of Quaker Oats (Quick) (I use regular)
                        1 cup raisins (optional) OR 1 cup choc. chips


Mix it all up and make into at least 1” balls.  I bake at 345 degrees in my oven on the rack that is one level above the middle of the oven.

Remove from oven after 10 or 11 minutes while the cookie is still a little raw in the middle.  Leave on the hot baking sheet to continue cooking for a minute or two.  This makes a cookie that is crisp on the outside but chewy in the middle.
