'Cause you gotta have friends!

Normally if we are going to have ice cream for dessert, we bring out toppings such as chocolate syrup, caramel sauce, nuts, etc. A while ago, we had the chocolate syrup out and we forgot or ran out of caramel sauce. Soon, my youngest son asked, “Where is the friend of chocolate?” “The friend of chocolate?” we replied. “Yeah, you know we always have chocolate and its friend with ice cream,” he said. So, caramel sauce now has a new name in our household, the friend of chocolate.

If you happen to run out of the friend of chocolate, you can always make it yourself. It only takes a few minutes.

1 1/2 cups sugar
1/3 cup water
1 1/4 cups heavy cream
1/2 teaspoon vanilla
Have all your ingredients ready before you start making it. 

Put the sugar into a sauce pan, cook the sugar and water over medium heat. Bring the sugar to a boil. When it turns a dark golden color, pour in the cream. It is going to bubble up so use a good size pan to avoid bubbling over. Remove from the stove and flavor it with the vanilla.  Allow the caramel to come to room temperature. It will get thicker as it cools down. Store it in the refrigerator.
