Arepitas Deliciosas

If you want to invite family and friends to a dinner party and give it a little international flavor, you can make arepitas (Little Arepas) as part of your appetizer. They are very delicious and very easy to make.  All you would need is pre-cooked corn flour "Harina Pan" that can be found and purchased at your local supermarket (usually Publix) or a Latin or Caribbean supermarket.
The recipe for how to make arepas is always on the back of the package. The main ingredients are corn flour "Harina Pan", lukewarm water and salt. For every two and a half cups of warm water, two cups of harina pan is needed.  Measure the water into the bowl and then add a teaspoon of salt to the harina pan before adding to the water.  Mix all of the ingredients together with clean hands and make sure to kneed the dough constantly.  Make sure the dough is moist but not sticky. Create small balls about 1 ½” in size and form them in the shape of a disk.  You can bake them in a 350 degree preheated oven or deep fry them until they are golden brown. Now you can make a small cut and stuff them with slice ham, shredded cheese, pico de gallo, chicken salad, black beans, sausage patties etc.
