I woke up wanting a sausage biscuit for breakfast.  Being in a hurry (I know, me?) I decided to make cornbread muffins instead cause they are quick and easy.


 Ingredients
1 1//2 cups white cornmeal
2 cups buttermilk
1 med egg
¼ cup cooking oil
1 cup shredded cheddar cheese
1 cup of cooked sausage

Directions
 Mix all the ingredients, pour in greased muffing tins, and cook until brown.



Tip:
 I  keep in the freezer pre-cooked sausage. I normally cook two packages and freeze one.
