Pecan breaded Chicken, Mashed potatoes & Green vegetables can be the perfect solution.
4 Skinned and boned chicken breasts, 2 tablespoons honey, 1 tablespoon of Dijon Mustard, 1/2 cup of bread crumbs and 1/2 cup finely chopped pecans.
Flatten chicken to a 1/4 inch thickness using a meat mallet or rolling pin. Stir honey and mustard; spread on both sides of chicken and dredge in a mixture of pecans and bread crumbs. Arrange in lightly greased 8” square baking dish. Bake at 350 for 15-20 minutes.
